Pickle Power: Spacey Tracy wins award

RHINEBECK - It's special when you find something you love and turn it into a successful business. Not many get an opportunity like that, but resi­dent Tracy Krawitt is living the dream.
Krawitt, whose former career paths included teaching and bar-tending, has become a full­blown business tycoon with her company, Spacey Tracy's Pickles.
At first, pickle making was merely a hobby. She would bring in some of her home-made pickled eggs to the bar she used to work at, customers raved about them and told her she should really go into the pickle business.
Needless to say, she did.

Recently, she even won awards at The Rosendale Pickle Festival for her delicious pickles.
Spacey Tracy won first place in the pickle category for her Sweet Sunshine Pickles, and second overall in the festival for her great presentation and fried pickle booth.
Kyle Black, a volunteer from the Culinary Institute of America, helps Krawitt run the fried pickle booth at over seven local fairs and three farmers markets throughout the year.
During the summer, Krawitt operates a booth at the Sunday Farmer's Market in the Village of Rhinebeck.
"I'm impressed that a local like her just starting in the pick­le industry received such an award so soon." said Black. "It's amazing."
Krawitt has gone from using her personal compact car to needing multiple trucks to sup­ply the growing demand for her wide range of pickled products.
Spacey Tracy offers various flavors of pickles, pickled pep­pers, green pickled tomatoes and different flavors of jellies. As well as, what started it all, 'Spacey Tracy's pickled eggs.
Everything is prepared and bottled at Hudson Valley Foodworks in Poughkeepsie, a big change from her kitchen at home, where she first started.
Krawitt also supports local farms by purchasing local pro­duce from areas around the Hudson Valley, receiving over 1,000 pounds of fresh produce during the peak season.
Fortunately, she gets help preparing the veggies from Foodworks' employees.
Krawitt oversees all the work done at the Foodworks to make sure all New York State guidelines are met and maintained.
"It's a. very big process," said Krawitt. "Every differ­ent bottle (or product) has to be approved."
Although this year's season is coming to an end, Krawitt is already planning and priming for next year, planning to buy a new, bigger truck tohelp with the increased demand.
Krawitt says the popularity of her fried pickle stand is a sign of good things to come. It is the wave of the future as far as Spacey Tracy's Pickles is concerned.
